Bubbles galore at Atlantis wine dinner
Atlantis Casino Resort Spa is holding its final installment in the 2015 Spirited Dining series at 6 p.m. Dec. 17. The Spotlight on Sparkling Wine dinner will feature celebrated sparkling winery Mumm Napa and G.H. Napa at Bistro Napa at the Atlantis.
Mumm Napa’s roots trace back to 1827, when G.H. Mumm’s Champagne house was established in Rheims, France. From 1976-79, the company’s founding president and winemaker, Guy Devaux was sent to search for an ideal winemaking area for growing traditional Champagne grapes in the United States, leading to Napa Valley, and more specifically, Rutherford. In 1991, Mumm Napa developed a vineyard in the Carneros region of Napa Valley. In the years that followed, Mumm rose in prestige, becoming the first California sparkling winery to receive 94 points from Wine Spectator, for its 2004 DVX.
The dinner begins at 6 p.m. with an amuse bouche of American paddlefish caviar nestled atop buckwheat blini, meyer lemon crème fraiche and fresh chives, paired with Mumm Napa Brut Prestige. For the first course, guests will tuck into jumbo lump crab cake with tropical fruit relish and mango coulis, paired with G.H. Mumm Cordon Rouge Champagne, Reims, France.
For the second course, guests will be treated to butter-poached Maine lobster with sweet potato gnocchi, sweet carrot and red pepper emulsion and rainbow microgreens paired with Mumm Napa Blanc de Blancs Reserve. For the third course, try pan-seared Sonoma foie gras, duck and wild mushroom ravioli, sun-dried cherry chutney and blood orange gastrique with G.H. Mumm Brut Rose Champagne. For the fourth course, tuck into red wine-braised beef short rib with stir-fried red quinoa and rainbow chard paired with the Mumm Napa DVX.
For dessert, there will be caramel budino with salted caramel sauce paired with the Mumm Napa Cuvee M Red.
