Enjoy fine wine and delicious food pairings for a good cause with Vintage Eldorado, kicking off the Eldorado Great Italian Festival, at 5:30 p.m. Oct. 8 at the Eldorado Convention Center. Presented by the Eldorado Resort Casino and Southern Wine & Spirits and benefiting Boys & Girls Club of Truckee Meadows, the event will include Italian food stations, Italian beer and wine tastings and a silent auction. Each dish will be paired with a fine Italian wine, carefully chosen by Roxy restaurant sommelier Jeff Vachon. The meal starts with the Eldorado’s famous mushroom ravioli, which will be paired with Ferrari-Carano Tre Terre chardonnay and Robert Mondavi chardonnay to bring out the richness and elegance of the butter and cream in the sauce, Vachon said.

He's pairing Ferrari-Carano pinot grigio, Avissi prosecco and Menage a Trois prosecco with the antipasti course, bringing to the forefront acidic and citrus notes. Vachon said a slightly dry red wine like Ferrari-Carano Siena or the Torra D Oro sangiovese is excellently paired with the second course of Berkshire pork porchetta -- the blackberry and cinnamon notes will complement the salty pork.

Vachon is pairing the Ferrari-Carano cabernet sauvignon, Villa Banfi Centine red, Ruffino Ducale and Planeta Segreta with the third course of New York strip tagliata -- the tannins provide something to cut through the marbleization of the steak, he said, while the wild berry and mocha flavors elevate the steak to another level of flavor. Francis Ford Coppola pinot noir, Villa Pozzi merlot, Antinori Santa Cristina and the Terra d’Oro barbera pair perfectly with the fourth course of shrimp marsala -- the shrimp’s sauce enhances the raspberry and cherry flavors of the wine.

For dessert, Vachon will be showcasing the Stella Rosa, which will pair perfectly with both the hazelnut gelato, tiramisu and almond cake topped with bittersweet chocolate and the rich flavors of the cannoli and Meyer lemon bars.

More than a dozen different types of wine will be poured at the event, each one carefully chosen to match the dishes being served at each tasting station – several of which are Ferrari-Carano wines. The Ferrari-Carano vineyard, located in Healdsburg, Calif., was founded by Don and Rhonda Carano. Don Carano also is the Eldorado founder.
